Delicious and healthy salad !! Many of you have written to us asking for more salads and healthy food. Here I present this salad delicious Mexican style, with all the flavors and color!
Tasty and Flavorful Mexican Salad
with honey-lime dressing (serves 3-4)
2 heads chopped romaine lettuce (you may want to add more lettuce if serving 4 people)
1 can (15.5 oz) black beans, rinsed and well drained
3/4 cup chopped cherrys tomatoes
3/4 cup fresh corn kernels, uncooked (or frozen or canned)
Half a ripe avocado, diced
1/4 cup shredded cheddar cheese
1/4 cup tortilla chips (see below)
1/4 cup fresh lime juice
1/4 cup olive oil
2 tbsp honey
2 tbsp finely chopped fresh cilantro (or more to taste)
1 garlic clove, peeled and minced
1 tsp chopped jalapeño pepper (use canned for less heat)
Place the lettuce in a large bowl and add the ingredients one by one finally put the cheese and tortillas.
In separate bowl, mix dressing ingredients. Pour dressing over salad. Season with salt and pepper to taste.
For tortilla chips:
You can buy in the store or make your own tortilla chips. For them over medium heat 1 cup oil, grip 3 or 4 corn tortillas and cut them into squares 1 x1 inch (or thin strips or triangles)
When the oil is hot add the sliced tortillas and fry for 1 to 2 minutes until golden and crispy … drain on absorbent paper.
