Ingredients
- ½ medium onion, diced
- 2 (15-ounce) cans mixed vegetables, drained
- 1 cup fresh Lima beans or 1
- 1 cup fresh corn off the cob 1
- 1 cup carrots, sliced
- 1 cup chopped celery
- 1 cup red pepper strips
- 1 cup broccoli
- 1 cup cubed potatoes
- 1 cup mushrooms
- 2 cups chicken broth
Instructions
Add all ingredients in the slow cooker
Cook in slow cooker for 4 hours on low.
Notes
Alternately, you may cook as directed using a large stockpot. Cover and simmer over medium heat for 45 minutes.
